Iwakuni’s vaunted local dish

A local dish that has been eaten in Iwakuni City for many generations, Iwakuni Sushi is chirashi-zushi as a preserved food, in the style of pressed sushi.
The dish is made in hearty amounts, with a large volume produced each time, and the toppings and sushi rice are pressed into the mold in alternate order. When ready to eat, each layer is cut into a suitable size and eaten separately.
The use of Iwakuni’s famous Iwakuni Renkon Lotus Root and fresh fish from the Seto Inland Sea as toppings is a characteristic of the dish. Delicious in flavor, this is a popular specialty product. It can be eaten mainly at restaurants and shops in the area around Kintaikyo Bridge.
